Five easy ways to get the most out of your Cloud Farms baby spinach. Silky, tender leaves that work just as well raw in a salad as they do wilted into a hot pan.

Spinach, Strawberry & Goat's Cheese Salad

  • Big handful of Cloud Farms baby spinach
  • 6 strawberries, quartered
  • Crumbled goat's cheese
  • Handful of candied or toasted pecans
  • Olive oil
  • Balsamic vinegar
  • Cracked pepper

Arrange the spinach on a plate, scatter the strawberries and crumbled goat's cheese over the top, and add the pecans. Drizzle with olive oil and balsamic. The sweetness of the strawberries and the tang of the cheese play beautifully off the mild, buttery spinach leaves.

Creamy Garlic Spinach

  • Two big handfuls of Cloud Farms baby spinach
  • 2 cloves garlic, minced
  • Knob of butter
  • 3 tbsp cream
  • Pinch of nutmeg
  • Salt & pepper

Melt the butter in a pan over medium heat and cook the garlic for 30 seconds until fragrant. Add the spinach in batches, stirring until wilted. Pour in the cream, add a pinch of nutmeg, and season with salt and pepper. Stir for another minute until the cream thickens slightly and coats the leaves. The perfect rich side dish — goes with everything from steak to roast chicken.

Spinach & Ricotta Stuffed Shells

  • Two handfuls of Cloud Farms baby spinach, wilted and chopped
  • 250g ricotta
  • Large pasta shells (conchiglioni)
  • Jar of passata or marinara sauce
  • Grated mozzarella
  • Parmesan
  • Salt, pepper & pinch of nutmeg

Cook the pasta shells until just under al dente. Mix the wilted spinach with ricotta, parmesan, nutmeg, salt, and pepper. Spread passata across the base of a baking dish, stuff each shell with the spinach-ricotta mix, and nestle them in the sauce. Top with grated mozzarella and bake at 190C until bubbling and golden. Comfort food at its best.

Green Power Smoothie

  • Big handful of Cloud Farms baby spinach
  • 1 banana (frozen is best)
  • Half an avocado
  • 1 cup milk or oat milk
  • 1 tbsp peanut butter
  • Squeeze of honey (optional)

Throw everything into a blender and blitz until smooth. The spinach adds a beautiful green colour and a nutrient boost without any strong flavour — the banana and peanut butter do the heavy lifting on taste. A quick, filling breakfast that takes two minutes.

Warm Bacon & Spinach Salad

  • Big handful of Cloud Farms baby spinach
  • 4 rashers of bacon, chopped
  • 1 egg per person
  • 1 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • Olive oil
  • Cracked pepper

Fry the bacon until crispy, then remove from the pan. In the bacon fat, whisk together the red wine vinegar, dijon, and a splash of olive oil to make a warm dressing. Poach or soft-boil the eggs. Pile the spinach onto plates, pour the warm dressing over (it will gently wilt the leaves), scatter the crispy bacon on top, and finish with the egg. Break the yolk and let it run through. Incredible.
